crustless (cauliflower "crust") pizza.


Ingredients: Note-This recipe makes two personal pizzas


1 16 oz. frozen bag of cauliflower 

2 eggs (free roaming/cage free is best!) or Egg Beaters
Oregano
Basil
Garlic powder

Extra virgin olive oil or any kind of cooking spray
Tomato sauce--Amount is up to you! I used one 8 oz of the sauce and one 6 oz of the paste.  Since then, I have found brands with less sodium and sugar that are much healthier.  These mixed were quite tasty and gave us plenty for two people. This was almost enough sauce for 4 pizzas!

Fat-free cheese (any kind or any cheese mix)

Toppings of your choice (stay away from fatty meats like sausage and pepperoni--those pictured are turkey) 


Mix the cauliflower in a food processor or blender.


Microwave the chopped cauliflower for four minutes.


Mix the chopped cauliflower, two eggs, shredded cheese (amount to your liking,) and oregano (again, the amount you prefer) into a bowl.



Grease the bottom of your pans with olive oil or any other type of cooking spray.  Then, pat half of the mixture into each pizza pan. 


Preheat the oven to 450 degrees.  Once the oven is heated, put the two pizzas into the oven for about 12 minutes until your "crust" is ready. 

 

Mix the tomato sauce and/or paste, oregano, basil, and garlic powder together to create your custom sauce. You can add as much or as little of the seasonings based on your preferences.  


Once your pizza/s have cooked for 12 minutes, remove them from the oven and add the sauce.



Add your toppings (cheese, veggies, etc) to your pizza.


Put the pizza back in the oven for 5 minutes (keep your eye on it as some cook quicker than others, depending on your oven.)  



I think it's safe to say my hubby enjoyed his crustless pizza! Success!

Hey Meredith! This is very impressive! So easy to make with all your pics and steps. I really want to try it soon for my kids. I see you used the cake pans to bake it in. Somehow I did not picture that before. No wonder how the shape stays so you can put toppings on it. Blake is so cute to this addition! LOL @ the end! :-) Thanks for sharing! Selina
